Accelerating climate change and extreme temperature events urge us to better understand and forecast evolutionary responses. In the Stelkens lab, we harness the power of experimental evolution with the microbial model system yeast (Saccharomyces spp.) to measure the evolutionary potential of populations to adapt to future climate challenges. The seminar will also cover applied aspects of using wild yeasts for the production of novel fermentation products.

From Lab to Lager: Turning Research into Real-World Impact. Discover how Dr. Stelkens’ yeast research spans from from a remote Patagonian forest to experimental beer brewing and has led to entirely new beer flavours and unexpected industry partnerships.
